Barolo - Il Ciliegio

This Barolo is entirely sourced from the rolling hills and slopes of vineyards in Boschetti. This vineyard being in one of the most expensive real estate of Italy is treated with the utmost care, no use of chemicals or pesticide, strict sustainable agriculture only, then it's hand harvested by local seasoned farmers at ideal temperatures, then is triple sorted at the cellar and finally is quickly gentle pressed. The wine spends a long maceration of about 14 to 22 days on the skins and frequent manual cap punching. The wine rests in oak cask first then in stainless steel before being bottle roughly between 26 and 36 months of maturation. The final product is rich and expressive, the aromas dominating the glass are reminiscent of violets, raspberries and blueberries, leather, tobacco leaf, chocolate and dried flowers like roses. The palate is ready and enveloping with an intense pleasuring juiciness, the tannins are silky and call for rich cheese like a local Robiola, Tomino, Crutin, or pair it with tagliatelle with Truffle, ravioli del Plin, risotto al Barolo or a game roast in Barolo.
