ORGANIC-BIODYNAMIC. They do not use pesticides, fertilizers and suchlike chemical products, instead favor old tradition with livestock compost and use of only natural yeasts. The Rossese di Albenga DOC (Riviera Ligure di Ponente) “U Bastiò”, is a wonderful local variety (Tibouren in France ), a very gentle grape that seats in the glass like a Burgundian Pinot Noir, fainted in color but expressive of roses, pine, cherry , marasca and other bright red fruits, the acidity drives this lovely wine followed by warm notes of wood berries and slight bitter finish. It's a great match for fish stew and white meats especially the local rabbit stew with the Taggiasche olives. The wine is vinified in stainless steel and is often consumed within few years of its production. They own 30 years old vineyards totaling three hectares.
